Choose the Job Options: Print

Then go settings --> Job options.

Use the "print job option" defaults for all except:

General
Compatibility: Acrobat 4.0 (PDF 1.3)
Click off Optimize for fast web view
Do not embed thumbnails
Binding: Left
Resolution: 1270 (for line art, business cards, etc.) or 2540 (four colour work or anything requiring a higher resolution)

Compression
Make sure quality is set to maximum.

Fonts
Embed all fonts
SUBSET FONTS at 100%.
(When you are preparing a PDF for press, ALWAYS subset at 100%.)

Color
Transfer functions: Remove
Click on Preserve Halftone information

You'll have to name and save this setting. It will appear every time you launch Distiller.

Now print your job as a postscript file and Distil it with these settings.
